About the Ayurvedic Cooking Class
Ayurveda originates in India and is more than 5000 years old. It is recognised by the W.H.O as the oldest and most complete traditional health care system. The word Ayurveda literally translates as the science of life and one of it’s fundamental strengths lies in it’s approach to nutrition and diet. An old Ayurvedic proverb states that “when diet is right, medicine is of no need and when diet is wrong, medicine is of no use”.
In Ayurveda, nutrition extends beyond the individual components of food (lipids, carbohydrates, proteins, vitamins, minerals and water) and incorporates other important principals, like taste, potency, digestive power, seasonal & individual variations, toxic load, correct timing, food combining, etc.
According to Ayurveda the caloric intake to output of energy is not of key importance but rather the diet should be selected in such a way that it should bring back or maintain homeostasis (balance within the body). It should stimulate appetite, pacify the vitiated Doshas (energies) & Dhatus (tissues) and at the same time it should be palatable. Selection of food & recipes should depend upon factors, like pathophysiology of a disease, the condition of digestive capacity as well as certain other individual factors.
Course Outline
- Introduction to Ayurveda & Ayurvedic nutrition
- The energetics of food & food combining
- The importance of the 6 tastes according to Ayurveda
- The medicinal & energetic qualities of culinary herbs & spices (used on the day) & how to use them appropriately
- The medicinal & energetic qualities of foods (used on the day or appropriate for the current season)
- The importance of seasonal variation
- Preparation & cooking of an Ayurvedic breakfast & lunch
- Preparation of Masala chai
This course changes with the seasons, generally there is 1-2 classes per season (Autumn, Winter, late Winter, Spring, Summer, Rainy Season)
